Chris Specialty Meats

Back when North America was an unconquered frontier, some settlers from France who called themselves “Acadians” sailed up the St Lawrence River and settled the area in Canada that is now called Quebec. They brought with them some of Europe’s tried and true cooking skills and food preparation recipes

Later, the harsh Canadian winters motivated some of those settlers to relocate to the “Louisiana Territory” where the mild weather and fertile Mississippi Valley made life easier and provided bountiful harvests of wonderful food. Those settlers became known as “Cajuns” (short for Acadians) and their arrival in Louisiana was the birth of what we now call “Cajun Cooking.”

True “Cajun Cooking” involves days of preparation of vegetables, spices, available meats and flavoring techniques, but the unique and wonderful tastes of the dishes made it all worth while.

With the arrival of the 20th Century and the automobile, telephone, airplanes, television and all the other “modern” advances, “Cajun Cooking” was almost a faded memory but it was carried on by some of the descendants of the original Acadian settlers in rural Louisiana, keeping the magnificent tastes and savory flavors alive.

Chris Lachaussee is one of those descendants, so is his sister Twyla. In 1994, they opened a store in Baton Rouge, Louisiana where they sold “Cajun” specialty meat dishes that were already prepared and needed only to be heated to finish the cooking process. Prepared from recipes passed along by their ancestors and other Louisiana families that date back over 100 years. Chris’ Specialty Meatss was an instant success!

People were tired of fast foods, pizza and TV dinners. People wanted good food and good taste without having to spend the time to make it. Chris’ Specialty Meats provided the solution and the people flocked in to buy it. Soon, Chris opened another store to meet their demands.
