Coppetti Olive Oil was started 5 years ago when we could no longer give away our increasing supply of home cured olives. Our trees are located just outside Oakdale near the Stanislaus River - our soil is an excellent mixture of sandy loam and river rock. The hot dry summers and cool wet winters give the trees a Mediterranean climate similar to Italy, Greece & Spain.

We maintain a chemical free farming process and personally supervise the harvest to minimize leaves, dirt and damage to our olives. The trees are hand harvested in early November and cold pressed within 24 hours. Our oil has consistently tested at an acidity rate of .31% or less. An oil at 1% or greater is not classified as Extra Virgin and is considered to be a lower quality product.

As our olive oil is processed unfiltered it is not uncommon to find a small amount of sediment at the bottom of the bottle. This in no way effects the quality or taste of the oil and in fact some believe that unfiltered oil taste better.
