Tony Chachere's® Creole Foods began as a retirement hobby for South Louisiana chef Tony Chachere the same year he published his first cookbook, Cajun Country Cookbook. In the book, Tony included the recipe for his favorite homemade seasoning blend, and several recipes in the book used the seasoning. Before long, cookbook readers were asking for the seasoning. Tony met the demand and began to manufacture his seasoning blend, which he named Creole Seasoning, along with an instant base Roux and Gravy Mix.
