Do you know what we love? Red cabbage! Red cabbage is a beautiful vegetable we fear is underrated by the general public. Not only is it incredibly nutritious, providing a good percentage of your recommended daily intake of vitamins C, A, and K, as well as plenty of fiber. It is also rich in cancer-inhibiting antioxidants. And it’s inexpensive—one head of cabbage goes a long way—as well as being low in calories. What’s not to love about that? Looking for Recipes!
