Using California’s bountiful almond, pecan, pistachio, and walnut crops, oils are made at the mill. The French-trained Maître Moulinier, or Master Roaster, painstakingly selects the finest nuts and slowly roasts them in cast iron kettles. The oil is then cold expeller-pressed, and lightly filtered rather than chemically refined. The result is oil with a rich roasted taste, and a clearly discernable difference in quality.
