Made a new pasta dish for dinner & paired it with our Rose, but you could also pair with Pinot Noir. Cook 1 lb penne in salted water as you make the sauce. Saute 1/2 cup diced guanciale, pancetta or bacon in saute pan until brown. Add in 2 cloves garlic and a shallot or 1/2 onion and cook a few minutes. Then add 2 cups of sugar snap peas to the pan (string & ends pulled off - and then cut them in to 1/2" pieces). Splash in a bit of the pasta water (1/2 cup). When pasta & pea pods are done, drain & add to saute pan. Add a pat of butter, lots of black pepper and grated cheese - yum!

If you have this in your cellar... drink it!! Susan Arbios and Bill make a great wine. And it's all sold out 😪

Cover crop dying back for the summer, but grapes are looking good!

Bull clover used to be abundant in the wild near the vineyard, hence Cloverdale. It is very similar to the plant we have growing in the vineyard (pictured). Cool, as the native flower is almost extinct, especially in the area.

Bill's hobbies on a plate: homemade boar sausage, lettuce from an old barrel in our driveway and his sauerkraut - paired with Praxis Merlot! YUM!
