Tom Tarby, and his wife, Joan, have owned Colonial Tavern since July 2, 1985. They both grew up in Seymour, CT, but have lived in Oxford for 27 years. Tom attended the Culinary Institute of America in Hyde Park, New York. After graduation, he worked at the Omni Parker House in Boston; the Curtis House in Woodbury, CT; and the Copper Beach Inn in Ivoryton, CT. Before buying Colonial Tavern, Tom and Joan owned a catering company called A Touch of Class. About to celebrate 32 years of business, the Colonial Tavern continues to be a family owned and operated establishment, open year-round.
