The dishes at Juarez are a mix of traditional flavors found within the Mexican States of Michoacan, Pubela and Mexico City.
Michoacan is best known for being the birthplace of Carnitas. Irma grew up in Sahuayo, Michoacan, where her mother taught her their family recipe for slow simmered Sahuayo style carnitas.
Pubela and Mexico City are famous for delicious street cart tacos. Manuel served as apprentice for popular taco carts eventually working his way up to running multiple taco carts within Mexico City.
